The position will report to the agency’s Food Program Director and will co-provide clinical nutritional expertise to Central Office and facility-based Health Service units to maximize offender health outcomes. The position will co-operate the Department’s menu management software system to sustain a comprehensive and unified menu program, ensuring that all diets and created menus meet established standards for nutrient provision, food program policies, and budgetary goals.
The position will ensure that orders for medical and supplemental diets are written only for documented and appropriate conditions at their designated facilities and that these diets are properly provided following the therapeutic menus they endorse. The dietitians will supply nutritional recommendations as needed for special medical conditions and nutritionally compromised offenders through assessment forms, in-person counseling, staff training, and health-team rounds. These positions will have occasional direct offender contact and will be required to travel up to 25% of the time.
Bachelor’s degree in dietetics, human nutrition, nutrition education, food and nutrition, food services management, or a closely related area.
Current licensure with the state of Minnesota as a Registered Dietitian Nutritionist or the ability to become licensed* in Minnesota within 90 days of appointment to the position.

Knowledge of large-scale food preparation, purchasing, and menu planning techniques.
Knowledge of the nutritional and food safety requirements for institutional feeding.
Human relation skills and ability sufficient to counsel, train, and make nutritional recommendations to offenders.
Excellent English oral and written communication skills in order to communicate effectively with and provide guidance to staff and offenders.
Computer proficiency with Microsoft Office applications.
Knowledge of nutritionally-challenging clientele (e.g. cognitively impaired, juveniles, disabled, low literacy, psychiatric disorders, chemically dependent).
Two or more years of Dietitian experience working in an institution or health care facility.
Current Manager’s-level Food Safety Certificate
Ability to utilize the Nutrition Care Process and develop special diets to address medical issues.
Experience operating nutritional analysis and menu management software.
The completion of pre-placement physical components may be required prior to hire for this position. These components consist of a physical examination, a drug test and/or tuberculosis screening.
