This is a University of MN study to understand more about the role lacto-fermented vegetables play in human health. Currently, we are recruiting participants under two groups: participants that EAT lacto-fermented veggies (krauts, kimchis, other veggie ferments) as a part of their routine diet (about 8 oz. at least 4-5 times a week) and those that DO NOT regularly consume lacto-ferments. We are looking for folks that DO NOT take a daily probiotic, those that have NOT taken any antibiotics, antivirals or antiparasitics in the past 6 months and those that DO NOT have any history of any serious illness or gastrointestinal disorders.
We are looking for people between the ages of 20 and 60 who are “healthy” individuals and are willing to write in a food journal (that we provide to you) for 3 days and then take a stool sample (sample kit is also provided to you). You will receive a copy of your gut microbiome profile free of cost.
